Abstract Mycotoxins are dangerous secondary metabolites produced by fungi, such as Aspergillus, Penicillium, and Fusarium, that pose serious health as well as ecological risks, since they are stable and adaptive in a variety of environments. These compounds are responsible for the contamination of crops and food supplies which further cause acute and chronic health issues in humans and animals such as immunosuppression, carcinogenic effects, and endocrine disruption. Environmental conditions such as temperature, humidity, and nutrient availability directly affect the production as well as the structural modifications of mycotoxins which in turn impact their toxicity and distribution.
This paper examines the dynamic relationship between environmental changes and mycotoxin behavior which involves structural and biochemical transformations due to climatic changes. By bringing together the most recent discoveries, it offers a full account of the genetic mechanisms that drive the synthesis of mycotoxin, their ecological and toxicology implications, and the health risks associated with their existence in extreme environments such as aquatic, and desert ecosystems.
